Paella is a classic Spanish dish that is made with rice, seafood, meat, and vegetables. It is a delicious and flavorful dish that is perfect for any occasion.


This recipe is unique because it uses a special technique to create a perfectly cooked paella. The rice is cooked in a shallow pan over high heat to create a crispy crust on the bottom.


Ingredients:


1 tablespoon olive oil

1/2 cup chopped onion

2 cloves garlic, minced

1/2 pound boneless, skinless chicken breasts, cut into 1-inch pieces

1/2 pound shrimp, peeled and deveined

1/2 pound mussels, scrubbed and debearded

1/2 cup dry white wine

1 (14.5 ounce) can diced tomatoes, undrained

1/2 cup chicken broth

1/2 cup chopped green peas

1/2 cup chopped fresh parsley

1/2 cup cooked rice

Instructions:


Heat olive oil in a large paella pan or skillet over medium heat.

Add onion and garlic and cook until softened, about 5 minutes.

Add chicken and cook until browned on all sides.

Add shrimp and mussels and cook until shrimp are pink and mussels have opened.

Add wine and bring to a boil.

Reduce heat to low and simmer for 5 minutes.

Add tomatoes, broth, peas, and parsley and bring to a simmer.

Reduce heat to low and simmer for 15 minutes, or until rice is cooked through.

Stir in cooked rice and serve immediately.

Tips for a Perfect Paella:


Use a good quality paella pan or skillet for the best results.

Do not overcrowd the pan or the rice will not cook evenly.

Add the rice towards the end of cooking to prevent it from becoming mushy.

For a vegan version, use vegetable broth and vegan shrimp.

For a seafood paella, use your favorite seafood, such as clams, scallops, or squid.
